kebab recipe is a very simple snack recipe. Kebabs are basically petties made from different materials. Shami kebab are affectionate petties made from beef and Chana dal(yellow split peas).They are popular in north India, normally served as an appetizer or a snack. Now shami kebab is a common guest serving food all over the world. Kebabs are full of flavor, soft, smooth, silky and crispy from outside.

How shami kebab can made
Kebab recipe can be made from different materials but Shami kebab can be made from mutton, beef lamb and chicken. But I don’t like to prepare them from chicken because the real taste of shami kebabs only comes from mutton and beef.
Almost shami kebabs are made from mince but I prefer meat (boti) therefore we will make them with small pieces of meat.
Important tip for making shami kebab
Always freeze the shaped shami kebabs before frying for 15-20 minutes so that they will not disintegrate in the frying pan.
Ingredients
Beef boneless | 500g | Dal Chana | 150g |
Onion | 1 large | Red chilies | 1 tbspoon |
Cinnamon stick | 1 inch | Green cardamom | 3-4 |
Black cardamom | 2-3 | White cumin | 1 teaspoon |
Coriander seeds | 1tbspoon | Cloves | 6-7 |
Ginger(roughly chopped) | 1 teaspoon | Garlic(roughly chopped) | 1 teaspoon |
Black peppercorn | 1 teaspoon | Turmeric powder | ½ teaspoons |
Salt( to taste)or | 1 teaspoon | Oil for frying | As needed |
Egg | 1-2 | Bread crums | As required |
For garnishing
Thin chopped onion | 3-4pcs | Mint | ½ bunch |
Green chilies | 3-4 crushed | Green coriander | ½ bunch |
Instructions
- Wash Chana dal and soak it for about 2-4 hours in proper amount of water. Kebabs will have a good texture if it soaked well. Different types of dal take soaking time according to their age.
- In a large pan add meat, ½ liter water, onion, black cardamom, green cardamom, salt, cinnamon stick, red chilies, cloves, ginger and garlic.
- Stir them well to bring a boil then cover the lid and cook for 10 minutes.
- Remove the lid and add soaked dal Chana and let to cook for 20-25minutes.
- Keep stirring till meat and dal become tender and water dries up. At this stage add coriander and cumin seeds in it.
- Remove from the flame and allow it to cool down.
- Grind it with a wooden ladle or chopper to make fine paste.
- Add onion, green coriander, mint green chilies into ground shami kebab material.
- Take 1 ball from it and flatten it between your palms and put it on the tray one by one.
- Now place a tava/frying pan on the stove on medium flame and add oil/ghee in it but I prefer ghee.
- Dip the shami kebabs in beaten egg and if you like crunchy touch then use bread crums
- Add shami kebabs in hot oil and fry each side for about 3-4 minutes until they become golden brown from each side.
Serving suggestions
Transfer all the delicious shami kebabs into serve plate and Serve them with pulao/biryani/Parathas / naan along with ketchup/sauces /green chatni,
Can also use as a petty for burgers or sandwiches.
