Fresh mutton | 500 gm | Green cardamom | 6 |

Directions
There are two steps to make mutton korma recipe.
First one is marination and second is cooking.
Marination for mutton korma recipe
Wash and clean the mutton carefully. Take large bowl and put mutton in it for marination.
Add all spice powders (cinnamon, Green cardamom, black cardamom, black pepper, cloves, coriander, red chili, salt and turmeric) along with yogurt.
Mix all the spices with mutton and cover it. Keep in the fridge overnight or at least 2 hours. Longer time marination give you better results.
Cooking of mutton korma recipe
In a big pot take half from the oil and heat it on medium flame. Put the marinated mutton in it and fry it on medium flame for approximately 10-15 minutes. At this stage, the marinated mutton flows in the yogurt and mutton drain the water. Cover the pan and cook it on medium flame for 15-20minutes.
In another pan fry the sliced onion in the remaining oil.
Stir continuously until it becomes golden brown.
Drain the onion and keep it to cool. When the onion become completely cool then make the paste in a blender. But do not blend it too much that it begin to release oil.
After cooking the mutton for15-20 minutes add paste of fried onion, ginger and garlic paste, stir continuously, mix it well and cook it until it release oil.
At this stage when mutton becomes slightly soft add mace and nutmeg in it.
Add 1 cup of water and continue cooking until mutton becomes soft, juicy and falls easily from the bones.
At this stage add Kewra water or green cardamom powder.
Mix it well and turn off the flame. Cover the mutton korma and allow it to rest for 4-5 minutes so that the mutton will soak up the flavors.
Delicious mutton korma is ready.
Serving suggestion
Serve it with chapatti, phulka, naan or any type of paratha.
You can also serve mutton korma recipe with steamed rice, Jeera rice or any type of pulao of your own choice.
But salad and raita of any type is must with this.
