Important tips to make beef yakhni pulao
If you are using a pressure cooker, then you must add 200ml of water and cook it for 15-20 minutes.
For 4cups of soaked rice will be 5 cups of yakhni.
If beef yakhni is less than from your requirement you can add boiled water to fulfil your requirement.
Properly soaked and long grain rice give outstanding taste.
Ghee is also a taste agent for the superior taste of pulao recipe.
Always cook the rice in a wide capacity pot to prevent broken rice grain.
At the time of adding beef yakhni, add salt.
When rice becomes start boiling you can add vinegar to avoid the rice stick each other.

Ingredients
For the Bouquet Garni (Potli)
1 medium size onion 7-8 cloves garlic
1tbspoon coriander seeds 8-9 cloves (loung)
1tbspoon cumin seeds 2-3 black cardamom
1 inch cinnamon stick 1-1 ½ Ginger piece
1tbspoon whole peppercorns
For the beef yakhni
1kg beef meat with bones
Water 500ml
Salt (to taste)
For the beef masala
Ghee 8tbspoon Onion 2large thinly sliced
Ginger paste 1 tbspoon Garlic paste 1 tbspoon
Turmeric powder ½ teaspoon Red chili 1 teaspoon
Salt (to taste) or 1 teaspoon Black pepper ½ teaspoon
Sour thick yogurt 1 cup Green chilies 6-7
Beef yakhni 5cups Basmati rice 4cups
65Garam masala (powder) 1 tbspoon
Coriander seeds (crushed) 1 tbspoon
Cumin seeds (crushed) 1 tbspoon
Instructions
For the Bouquet Garni (Potli);
1, In a Muslim cloth, add all the ingredients and wrap it up to make a Potli.
For the yakhni
2, in a pressure cooker, add beef, water and bouquet Garni.
Bring to a boil and then cook under pressure. It will approximately take 15-20minutes.
3, once the meat is tender, remove the Bouquet Garni (Potli) and discard it.
4, Remove the beef and set it aside.
To make the beef yakhni pulao
5, In a separate pot add ghee and fry the onions until they become golden brown.
6, Add the cooked beef and ginger garlic paste. Cook for 5-10 minutes on high flame.
7, Now add all the spices in it and mix well.
8, Add the whisked yogurt and cook on high flame until water is reduced and ghee separates and you can see it on the surface of beef.
9, Add green chilies and mix it well.
10, Now add the prepared beef yakhni and allow it to a gentle simmer.
9, Add the soaked rice. Cook on high flame until water has mostly reduced. Cover the pot tightly and steam cook for about 10-15 minutes on low flame.
10, Remove from flame and let it allow for 4-5 minutes. Now beef yakhni pulao is ready.
11, Transfer into the serving plate/tray.
Serving suggestions
Serve it with raita, salad and shami kebab.
