Best tips for beef paya recipe
It must be cooked on medium flame for 3-4 hours.
Never cook it in a pressure cooker.
Always use the fresh trotters for beef paya recipe.
Don’t add artificial color and pupae (papita) in it. It disturbs the natural delicious taste of recipe.
Never add cornflour or any other material for the thicken of soup. It change the natural taste.
Ingredients
Trotters | 1 large | Onions | 2-3 thinly sliced |
Cooking oil | ½ cup | Coriander powder | 1 teaspoon |
Gram masala | 1teaspoosoupn | Salt (to taste) | 1 teaspoon |
Red chili powder | 1 tbspoon | Ginger garlic paste | 1 tbspoon |
Cardamom | 2-3 medium sized | Cinnamon stick | 2-3 inch(2-3) |
For garnishing
Coriander leaves | ½ bunch | Green chilies | 3-4 chopped |
Instructions
Wash and clean the trotter well, remove any hair. In a large pan (that can hold about 4-5 liters of water) add trotter and enough water to cover it. Boil on medium heat for 1-2 minutes and remove the water. By this process you can finish the raw smell of the trotters.
Now add water in the trotters as much that all the meat can dip easily in the water.
Add onion, red chili and salt in it.
Boil it and cook on medium heat for about 3 to 4 hours. During this process if you see that water is not enough and trotters are not yet absolutely tender, add in some more boiling water (do not put cold water).
When trotters become tender and water absolutely dries up then add ghee or oil in the same pan, ginger, garlic paste, cardamom and cinnamon stick and fry it for 10-15 minutes.

Now add gram masala and coriander powder in it and fry it for more 4-5 minutes.
In another pan boil water according to your soup requirement and add in the first pan.
Place the pan of beef paya recipe on low heat for at least 1 hour.
When soup thicken remove from heat and garnish it with green chilies and coriander leaves.

Serve beef paya recipe hot with any type of naan, Rumali roti or any type of roti.
